Blueberry Crumb skillet

½ Cup Almond flour

1/3 cup Coconut Flour

2 Scoops Protolyte

¼ Cup Sugar substitute

1/3 Cup Light Butter (softened)

¼ Cup unsweetened apple sauce

¼ Cup Greek yogurt

Handful of Blueberries

1 Tsp of all purpose flour

¼ Tsp Clear Vanilla extract


Preheat the oven to 350F, and spray a mini cast iron skillet/ or an oven safe pan with non-stick cooking spray.

Combine all dry ingredients, and then in a separate bowl combine all wet ingredients. Reserve the blueberries and coat them in the flour. Mix everything until a cookie dough forms. 

Press the dough lightly into the pan then press the blueberries into the douhgh

Bake for 18-22 minutes, or until the center is slightly under done. The skillet will be verry hot and continue to cook the cookie once out of the oven. 


Top with low fat Cool Whip and Enjoy!
